Brisket
Our brisket is essentially a good ol' Texas Style brisket, often characterized by a simple Dalmatian Dry Rub (salt & coarse black pepper). But we add in a few other dry essences of preference, that also adds flavor to the bark giving the brisket a little more personality. Pecan, hickory or oak wood - or sometimes a mix of 2 of the 3, is our smoke fuel.
